How come NFL coaches are able to negotiate guaranteed relatively long term contracts, when often times they are fired with multiple years of compensation still due them — e.g. John Gruden and Greg Schiano?

It all depends on what they have to do to sign their coach. Sometimes they get into a situation where they are competing for a coach with another team. It’s no different from free agency. It becomes a bidding war to some degree.
